- 2 kilogram chicken perfectly dried up
- 2 teaspoon olive oil
- Salt and pepper according to your taste
- 3 rosemary sprigs
- 1 or 2 lemons
- 100g of unsalted butter preferably melted
- Minced garlic cloves
- 1 tbsp of sage, chopped finely
- 2 tsp of chopped rosemary
- 1 tbsp of parsley, chopped finely
- 1 cup of white wine or sodium broth
- 1 onion, chopped or quartered
- 1 bulb of garlic

How to make roast chicken
The first thing of cooking roast chicken is never to put the frozen chicken on the gas oven; that is the basic culinary knowledge everyone should have. Thus, take out the whole chicken from your refrigerator 30 minutes prior to the cooking session. Preheat your oven to 220ºC. Fan or convection of microwave, both will work.
For the second step, take the butter in one big bowl and add minced garlic cloves, 1 tbsp of sage, 2 tbsp of rosemary, 1 tbsp of chopped parsley and ½ tsp of salt and pepper. Mix these butter ingredients well. After mixing them properly, add 2 tbsp of lemon juice to it.
Now coming to the chicken part! Take the chicken in a roasting pan to loosen the skin of the chicken slowly. Use a dessert spoon and scrape the skin from chicken breast and the drumstick portions. Do not loosen skin from the underside.
After that, all you have got to do is to bathe it literally in different mixtures. At first, drizzle the butter mixture under skin of the chicken. Use most of the garlic or herb sludge to make it perfect. For the next step, sprinkle the remaining butter mixture on the top surface of the chicken. To make it even juicier, squeeze lemon once or twice on the top of the butter mixture.

Thus, to make the chicken juicy, you have to stuff lemon wedges and rosemary inside the chicken. End this step with tucking the drumstick end of the chicken with tape or wire.

Coming to the oven time, this step has the least work for you. Transfer the chicken to oven and roast it for 10 minutes. After that, turn it over and roast it for another 1 hour or 75 minutes. The whole process should have to be done on 180ºC. Now, roast the chicken until the internal temperature 75ºC or juices run clear. At the interval of 30 minutes, spoon the pan juices over the chicken skin.
Once it is done, let it rest for 10 or 15 minutes. Remember, do not cover the roast chicken while it is cooling down.
SERVING AND PRESENTATION
