As I have said earlier, chilli chicken recipe is quite a simple recipe to be cooked at home. No one needs to be master-chef to prepare a simple chilli chicken dish, do they? Ingredients

The ingredients for cooking chilli chicken can be classified into three heads, i.e. marinating the chicken, veggies and seasoning

Marinating the chicken

  • Boneless chicken of 250 to 300gm
  • 2 tsp of chilli sauce
  • 1 ½ tsp of soya sauce
  • ¼ tsp of pepper powder
  • 3 tbsp of cornflour
  • 3 tbsp of plain flour
  • ¼ tsp of red chilli powder
  • 1/8 tsp of salt

Seasoning of chicken

  • 1 ½ tsp of soya sauce
  • 2 tsp of chilli sauce
  • ½ tsp of red chilli powder
  • 1 tsp of vinegar or according to your need
  • ½ tsp of sugar
  • Oil for deep frying the chicken

Veggies to be added to the dish

  • Sliced or chopped 1 onion
  • Garlic chopped of 2 tsp
  • ½ cup of bell pepper; cubed or sliced
  • 2 green chillies; sliced from the middle, deseeded preferred
  • 5 or 6 celery leaves, chopped finely
  • 1 tbsp of onion again for garnishing

How to make

How to make chilli chicken

The first step of preparing chilli chicken is to make the chicken juicy. Thus the step of marinating the chicken has to be perfect and smooth. Let us have a look.

Step 1 – Prepare the chicken

  1. At first, you have to marinate the chicken with soya sauce, chilli sauce and pepper powder optional. Now, this marinated chicken should be set aside for minimum 45 minutes which can go up to 2 hours if you want your chicken to soften a little. 

  2. Now that the chicken has been marinated properly, you can sprinkle corn flour and salt on the chicken and mix well. You can use plain flour instead of corn flour as well. Also, add 1 tbsp of chilli powder to spice it up. Do not leave the marinated chicken all dried up. If the mixture is dry, do not forget to sprinkle water a little. For the best result, you can add the egg white to it.

Step 2 – Prepare the sauce

  1. If you want this chilli chicken recipe to work perfectly, you need to concentrate more on preparing the sauce. Add chilli sauce, soya sauce, red chilli powder and ½ tsp of vinegar and sugar. Now mix them well with a spoon. 

Step 3 – Making the chilli chicken

  1. Now that the chicken has been marinated properly, you can start frying it. At first, heat oil in a pan for deep or shallow fry, it depends on you. Or else, you can grill it at 240ºC for 25 minutes. When the oil is preheated well, you can slowly drop the marinated chicken cubes in the pan. Fry them well.

Step 4 – Seasoning of the chicken

  1. Now that the chicken has been fried well, you can remove the excess oil from the pan. Add the garlic, ginger, onion, bell pepper and fry them until it started to soften a little. However, the veggies should still be crunchy. 

  2. Now pour the sauce and stir the mixture. When the sauce starts popping bubbles, add the chicken and cook it properly. And if you want to make this chilli chicken gravy, just add 1 tsp of corn flour and 2 cups of water to it.

Notes

1. Do not deep fry the veggies. Keep them crunchy for the taste.

2. While marinating, if the mixture tends to be a little dry, add a cup of egg white or a cup of water to it.

SERVING AND PRESENTATION
